Alpha-amylase - Enzyme for starch hydrolysis Alpha-amylase ENZIM is the enzyme that catalyzes the hydrolysis of alpha-1,4-glycosidic bonds of starch, which leads to a rapid decrease of the viscosity of gelatinized starch solutions.
